I have been traveling, researching, and meeting with farmers, fishermen, and chefs who are passionate about bringing real food to the table and who are making a difference in their communities. Working closely with them as they share and teach their wisdom, I find they hold the same values I do. Values of good farming practices, which not only preserve the land, but produce great food, which leads to good health and a healthier planet. These values shape all of the culinary experiences that I offer. I have carefully planned two trips that bring together the food, history, culture, flavors, and terroir of the regions to life. Croatia September 15-21, 2024 Azores September 29th – October 6th, 2024 Immerse yourself in a place where animals are raised well, fish are wild caught, plants are harvested in tune to regenerative practices, and the art of a slower life is cherished. Come, awaken your senses as we learn together exploring dairy farms, organic vegetable gardens, wineries, and small villages. Join me for cooking classes, tastings, and meeting with the farmers and families who live and work in these beautiful places. Remote, enchanting, authentic, genuine, and magical are words that past participants have used to describe these experiences. The Croatian culinary adventure will take place in the region of Istria! Istria is in northwestern Croatia and is also the largest peninsula within the Adriatic Sea, located at the very head of it. It is shared by three countries: Croatia, Slovenia, and Italy, with 90% of surface area being part of Croatia. The history of Istria’s roots dates back to the Roman Empire, evident in its well-preserved ancient towns, amphitheaters, and temples. This region in particular is a true culinary gem! Family-run farms that produce world-class wine and olive oil are a part of the region’s captivating landscape. Forests laden with black and white truffles, wild fish, and grass-fed animals yield products from which tasty meals are created.
