Apple Almond Irish Cake and of course it’s gluten free

Of course, This is a recipe a long way from Ireland...

Apple almond cake is made with just a few simple ingredients, but it is delicious!

It is paleo and gluten-free too!. An 8” or 9” springform pan is best for this cake.

3 cups almond meal

1 tsp baking powder

1/2 tsp salt

1 1/2 cup coconut sugar

1/2 cup melted coconut oil

6 eggs

1/2 tsp vanilla extract

1/2 tsp almond extract

2 cups peeled and chopped apples (Granny Smith)

1/2 cup slivered almonds

1/4 cup apricot preserve

Stir together 3 cups almond flour, 1 tsp baking powder and ¼ tsp salt in a medium bowl.

Beat the eggs together and add int 1/2 tsp vanilla extract and 1/2 tsp almond extract.

In a large bowl, mix together 1 1/2 cup coconut sugar and 1/2 cup melted coconut oil until well combined. Fold in 6 eggs well beaten, a little at a time, beating well after each addition.

Add almond flour mixture and blend. Fold in chopped apples. Pour cake batter into a greased 9″ springform. Top with slivered almonds.

Bake 45 – 50 min at 350˚F. Allow to cool 10 minutes and then run a knife around the edges of the cake to loosen the cake. Transfer to a serving platter, serve warm or at room temperature.

Warm apricot preserves in a small pan over medium heat until it breaks down. Using a cooking brush, brush the top of the cake with the warm apricot preserves.
