Week 1: Free Virtual Cooking Class
I hope you’ll be joining us for our virtual cooking classes. These are free, but because they are on zoom, you need to register. The first week of classes will take place on Wednesday, April 1; Thursday, April 2, and Friday April 3.
We will assume that your kitchen has butter and/or olive oil, salt, and some dried spices

Wednesday Class: Beef Marinara over Cauliflower Rice
1lb Mermaid Farm 'Grass Fed Ground Beef
1 eggplant
2 large onions
1 can organic tomatoes
garlic, fennel, Italian spices
organic cauliflower
organic lemon
Thursday Class: Greens and Eggs
One dozen Vineyard pastured eggs
1lb Chilmark raised greens
Added Bonus: Onion, Lemon, Mustard, Spices- Berber, Za’atar, Curry, Parsley, Cilantro, Cucumber, Fermented Vegetables, Avocado,
Friday Class: This is about using what you have on hand. We are all confined to our homes, so let’s see what you have on hand! I will teach you how to make do! So come and bring your carrots or whatever you got and we’ll make a dinner!
Crispy Rice and Moroccan Vegetables
2 cups organic basmati rice
Mermaid Farm yoghurt (one container)
1 can organic tomatoes
Spices Either Moroccan or Indian Curry
Morrocan ( raz el hangout: cinnamon, ginger, cumin, coriander, nutmeg, allspice)
Indian (coriander, cumin, turmeric, ginger, dry mustard pepper, cinnamon, cardamom)
Organic vegetables like :
Fresh Ginger Garlic, Onions, Leeks Carrots, Cauliflower, Sweet Potato, Zucchini, Frozen bag or peas or corn, Broccoli, Bak Choy, …
Lemon or vinegar (preserved lemons would be divine)
You can choose: Moroccan Spices OR Indian Curry (and if you have coconut milk, bring it!)
