Ratatouille and Zucchini Soup

Ratatouille is a rustic stew from southern France that features eggplant, onions, summer squash, garlic, and herbs. Traditionally, the ingredients are simmered for hours until tender. In this recipe, the ingredients are broken apart, or ‘deconstructed’, and brought back together in a nontraditional and unique way. Each vegetable is cooked separately and then gently tossed together. This allows for each vegetable to stand on its own.

This simple zucchini soup is packed with deliciousness!
