Come join me in a unique culinary experience in the Azores this Octboer 2024!

The island of Sao Miguel has been chosen as our destination. (It’s a five hour non stop flight from Boston or New York!)
This hidden gem is among a group of nine islands in the middle of the Atlantic Ocean that forms an autonomous region of Portugal. The Azores natural beauty and the food heritage is deeply rooted in the volcanic soil and surrounding ocean that evoke a profound sense of connection to the earth and sea. I found the best of the best, in farming practices, those who bring food to the table, and those who create a life that reflects the textures and balance of the ruggedness, the fogginess and the verdant edges carved out of hillsides of Sao Miguel. 
And I invite you to come along taste and learn in a 7 day culinary retreat. 

It is an all inclusive, 7 days of learning and experiencing the flavours of the Azores. From the culinary experiences, to the wine, to the conversations, to the accommodations, each has been carefully crafted and chosen for an ultimate week! 

Cook with amazing chefs, explore verdant farms and plantations, learn from the local farmers and witness a way of life. Fully immerse yourself in the nature of the archipelago. Whether you’re a novice cook or an experienced culinary professional, the Azores offers a soul stirring discovery of a place, as we learn about the evolution of food anchored in traditions of this stunning region that will leave you inspired.  The experiences will revolve around tastes and foods of the region, but there will also be hiking and time to immerse in nature.

We have chosen Furnas Lake region for the accommodations. Furnas is the most easterly volcano on Sao Miguel and the best place to really feel the volcanic origins of the Azores. There are over thirty geysers and hot springs dotted around the village. Their temperatures vary, as does their mineral content – from the cool, crystal-clear waters of the drinking fountains to iron-rich hot springs and swimming pools. From the arrival of the first settlers to the valley, residents and visitors have been enjoying the therapeutic waters of Furnas for over 500 years.

There will be three cooking classes throughout the week, each beginning with a tour of the gardens and an overview of the purveyors. 
With a few culinary professionals like Chef Hugo Ferreira and chef Maria da Paz Estrella Pimentel, organic farmers Paulo & Ines, culinary entrepreneur Pete Luckett, are among those we have chosen. Each will offer us a tour of their home gardens, with fresh, authentic meals served over paired wines.

Experiences:

At Furnas Lake, time has its own rhythm and the seasons reveal new flavours from the land and the ocean. Chef Hugo offers a modern experience that celebrates traditions and keeps memories alive and always fresh!

There is an abundance of spring waters with charming fountains along the village of Furnas where fresh water from many of the volcanic springs runs nonstop. Some are hot, some warm, some cold, some sulphuric, some bubbly, all truly amazing! 

A private tour and tasting of many of the volcanic spring waters, along with an academic exploration into their varied healing properties.

And there is a tour, a tasting, and a lovely hike through the oldest organic tea plantation in all of Europe. This five generation family owned farm has been operating since 1883. You will learn about the harvesting of black, green and white teas. This tea is an ecological product, free of pesticides, herbicides and fungicides and is grown sustainably and organically next to rolling meadows of cows grazing on grass, all overlooking the Atlantic Ocean!

And then there is Chef Hugo, whose roots are planted in the Azores, but his culinary technique is that of a worldly, master chef. Hugo will gather vegetables and herbs from the garden with us, using the grass-fed beef of the farm and house made sausages. Together, we will layer the pot which will be submerged into the boiling waters of the volcano. Chef Hugo will teach us the traditional Cozido das Furnas which is possibly Portugal’s most unique dish. It can only be found in Furnas on São Miguel of the Azores islands. This special hearty stew is slow-cooked underground by volcanic heat set amongst steaming rocks and pools on the side of an atmospheric lake,  and is a burial ground for Cozido das Furnas. These cooking holes have been passed down through the generations. Many families or restaurants have their own cooking hole, where they make this uniquely-cooked food.

And there are a couple of super fun fish restaurants that are just too good to describe. One is famous among the local communities and nestled into a bustling village, serving simple and tasty meals. The other is much more refined, where you pick your fish from the display and choose your method of preparation. There are shellfish and fish, special to this region, with a plethora of dishes that we can all enjoy family style! 

And there is an organic pineapple farm tour and tasting. From Pineapple carpaccio, to pineapple sorbet, you will learn why this pineapple is not like the supermarket pineapples from Costa Rica.

A very old and common practice in Azorean culture is an experience of the joy of picnics.  Baskets in the field overlooking yet another breathtaking view is what a lunch will offer us after a morning of volcanic crater hike. In the Azores, anyone can stop along the way and enjoy a break in a field with cows. Blankets and laughter accompanied this family tradition and lying around  to contemplate the landscape is encouraged too!

And there is a traditional Azorian dinner on a Lusitano horse farm with an equestrian show. Our evening will be at this family estate with horse stables and dining hall. This farm is known for breeding the Lusitano horse. We begin with a visit to the stables to learn about the Lusitano, known as powerful horses and noted for their intelligence and willing nature. We will meet the family of this farm over wine and cheese followed by dinner. A horse show and dessert are part of this magical evening.

And there is a hike to a village that can only be accessed by foot along the rugged coast. And a picnic overlooking a volcano.

These are my personal favorites that I have chosen because they represent the culture and the terroir of this amazing beauty! So consider a 7 day journey with me!

Azores day by day sample itinerary:

DAY 1 | A Day to settle in and taste and toast the Azores

Welcome breakfast • Villa’s host introduction to our property •Furnas Lake buffet lunch •Hike around Furnas Lake • Review of itinerary, familiarise ourselves with the culture of the Azores and get to know some Portuguese language while tasting the wines of the Azores - a taste of what is to come- sourcing and taste of place and a wine pairing by chef Hugo and Jan • Light dinner • Optional: night hot spring .

São Miguel Island is home to an exceptional array of mineral hot springs sure to elevate you to unmatched levels of relaxation. We will explore the thermal paradise, featuring steamy, iron-rich pools tucked amid lush green vegetation and tropical trees, heated by a volcanic vent and cooled by the ebbing tides of the Atlantic.

DAY 2 | Water tasting experience, Tea plantation & Hike

Starting the day early, breakfast prepared in baskets for each room • Tour of the village of Furnas - with an eye on Azorean gastronomy, geothermal cooking with mineral water tastings and lectures on the water qualities. • Lunch at a local fish restaurant where the locals come from all over the island to eat fresh fish. • Organic tea plantation tour, tea tasting and hike • Pico da Cruz equestrian horse show and Dinner experience.

DAY 3 | Cozido Cooking class, Farm to table experience & Hot springs

Breakfast at our vilas in Furnas • Cozido cooking experience at our villas • hike around Fogo crater • Boca Aberta restaurant: Sao Miquel is the perfect place for a variety of fresh fish, family style dinner with explanations of each of the fish, the harvesting and the preparations of melt in your mouth freshness, all perfectly paired with Azorean wine.

DAY 4 | | Farm Tours and Private Hands On Cooking class

Breakfast at our villas in Furnas • Fish market: shopping for our cooking class - Our host and chef, Maria, will teach us about the gastronomic culture of place. Classes begin in her garden and the class is hands-on, where secrets are unveiled on the methodology of Azorean cuisine. After cooking we will sit together and enjoy the meal on the patio.• Hike • Garden harvesting  at an organic vegetable farm.Dinner with the farmer, paired with wine.This 3 acre family farm is dedicated to a diverse production of biological vegetables. Restaurant chefs from all over Sao Miquel seek this family’s products for meal preparations as our farmer prepare daily harvest boxes. We will gather our own box for our following day’s cooking class.

DAY 5 | Day to relax

DAY 6 | Hike arounc crater, Picnic time, Farm to table experience

Hike around crater of Sete Cidades • Sete Cidades picnic for lunch • A stop at a 100 year old organic pineapple plantation to visit the greenhouses where the ‘king fruit’ is produced. The tour is followed by a tasting of pineapples every way! • Dinner at sustainable organic farm - We will join this British-Canadian entrepreneur and media personality, Pete, known as a culinary fruit and vegetable expert, but in the Azores he grows vegetables and fruits on his farm overlooking the Atlantic. Pete will provide dinner and stories about his life as a culinary visionary over wines from his private collection.

DAY 7 | Free time & goodbye dinner party

There is so much more to explore and see, it was impossible to put it all in 6 days and try as we could, offer to you a day for yourself! We will guide you or make arrangements for you to take part in anything you wish, be it a day of shopping in the city, a walk through the botanical garden, a day at the beach, a zip line through the forest or quiet moments around the 240 acre forest of the property, we will help you get there!  Cost of your Saturday experience is not included in the price.• Dinner with our hosts, Helena and Manuel, together with chef Hugo and a goodbye until we see you again evening is included!

DAY 8 |Farewell

After breakfast, we are saying goodbye until the next time! Departures to the airport.

Note: The trip itinerary starts at 8 AM local time on September 17th. The trip does not include transportation from airport to hotel, there are taxis available right outside the arrivals for approx $50.

Accommodations:

Furnas Lake Forest Living

You’ll be immersed in nature and experience the comfort of the modern rustic luxury. Each private villa sleeps up to three with a living area, kitchen, private bath, porch and southern views. Organic linens for comfort and endless morning coffee, tea and breakfast each morning.  

Each of these forest villas are built with the wood of the Japanese Cedar wood - Cryptomeria. These trees were introduced to the islands 200 years ago, one of many reminders of this Asian influence, like azaleas and bamboo that line the volcanic trails and the forest roads.

Each room has a private bathroom and kitchen, in rustic and modern luxury, with organic linens and breakfast!  

Jan will be offering two cooking classes which will take place in the pavilion at the hotel’s estate- glass building surrounded by greenery, perfect for hosting cooking classes.

  • International roundtrip airfare

  • Suggested Personal travel insurance that at least covers medical emergencies and cancellations;

  • Saturday lunch; Saturday is a free day for you to explore 

  • Alcohol, beyond the two glasses of wine that are included.

  • Any extra excursions or events you plan with or without our help. Excursions would be on Saturday, during the day

This culinary experience is not for vegetarians or vegans. Fish option will be offered most meals.

The trip starts and finishes in Furnas village, Sao Miguel Island, Azores. The Capital’s Ponta Delgada airport is a  35 minute drive  from Furnas, and is not included in the price. 
Taxis are easily available at the airport for $50.
We are happy to help with other arrangements if you wish to come days prior or would like to extend following  the 7 nights. Please reach out to us to alert us when you have your flights booked.

We will be hiking so comfortable layers are suggested. Sneakers and hiking shoes are perfect for this trip.
For the evening dinners, a comfortable dress up style is the best option, but not required.

60 days before your trip we will email you with an itinerary of the trip, arrival and departure information, suggested packing list and more! We want this to be an amazing trip for you, so reach out with any questions.

Culinary notes & restrictions:

We will be eating meat and fish and while we can ensure a fish option over meat, dairy is a big part of the Azorean culture. Fresh fruits and or vegetables and salads will be offered at most meals.
We can try to accommodate you, but cannot guarantee consideration of allergies. Please contact us in advance of registering if you have any dietary questions. 

Weather:

In October, the weather in Sao Miguel island is typically warm and pleasant, with mild temperatures and plenty of sunshine. Located in the middle of the Atlantic ocean, it is important to note that the weather can change quickly.
In October, the average high temperature in Sao Miguel island is around 24’C (75’F), while the average low temperature is around 18’C (64’F). The island experiences a moderate amount of rainfall throughout the year and September is no exception. We suggest light layers and a light raincoat.

How to pack:

Pack light, casual and comfortable.  We suggest you bring layered clothes, swimsuits (for the hot springs and beaches), hiking shoes, small backpack and water bottle, comfortable clothes for hiking, as well as a raincoat!
*Please note that if weather causes any challenges, some activities might be switched to another day.
