Chocolate Almond Italian Crackles (Gluten-Free)
My two favorite stores, Tisbury Farm Market and Vineyard Grocer both carry Bob’s Red Mill Brand Almond Flour and Coconut Flour - they also make a Baking Powder that does not contain aluminum. I happened to have Trader Joe’s brand in my cupboard.
4.5 cups almond meal (I get the Trader Joe’s Just Almond Meal)*2 tsp baking powder (Bob’s Red Mill contains no aluminum)¼ cup coconut flour3 ounces unsweetened dark chocolate1 cup maple syrup1/8 cup bourbon or rum¼ cup butter2 tbsp vanilla1 egg – beaten2 cups powdered sugar (If you must be sugar-free, you can skip the powdered sugar) Woodstock or Wholesome brand does not contain GMOs
Combine the dry ingredients in a bowl and set aside. Melt the chocolate and butter in a saucepan. When the butter and chocolate are melted, add maple syrup, vanilla and egg. Add to wet ingredients to dry ingredients and stir until completely incorporated.
Line a baking sheet with parchment paper, roll cookie into balls and roll in icing sugar if desired. Press down with your thumb. Bake in a 350F oven for 20-24 minutes. The cookies will “crack” when they are done.
*Note: Almond meal and almond flour are the same and you can grind your own almonds if you can’t find it.
