Almond Rice

6 servings1 cup of basmati rice2 cups of chicken stock or water4 ounces of toasted almond slivers1 Tbsp of diced preserved lemon2 Tbsp of parsley, mincedPreparing the Rice:Boil the chicken stock in a small pot that has a tight fitting lid. Add the rice, cover and reduce heat to simmer. Cook according to package directions, about 25 minutes.Stir in almonds, preserved lemon and parsley right before serving.Delicious served with Moroccan Pomegranate Chicken with Preserved Lemons.Image Credit:  Elenadan
