Basic Brine

  • Here is a basic recipe for brine to be used for your holiday turkey.

  • Brine ratio is 1 gallon water : 1 cup kosher salt : ¼ cup sugar, plus any aromatics you’d like to add. 

    You’ll most likely need at least two gallons of water for one turkey. Dissolve the salt/sugar in the water add peppercorns

  • 3 bay leaves,

  • 4 sprigs of thyme

  • ⅛ cup of coriander.

    The general rule for brining is to brine for as many hours per pounds of bird. 

    If you have a 14 lb turkey, brine for 14 hours.  It is possible to "over brine", so be careful not to leave the turkey in the brine too long.
