Caper Dressing

One great habit that I hope you will incorporate in your weekly culinary habit is to make your own salad dressings and sauces.  Once you have the basic ratio down of acid to fat content.  The most common ratios are 1:2 or 1:3 parts vinegar:oil. Only you know how acidic you prefer dressing. It doesn’t matter the actual ratio, but check out this page for a nice variety of fat/oil ratios to acid/vinegar dressings.

Caper Dressing

This is great on fish and on top of potatoes and I always add 1-3 tablespoons capers to the salad! 

2 garlic cloves, crushed.

3 T fresh-squeezed lemon juice.

1 tsp. caper brine.

3 Tablespoons extra virgin olive oil
