Cashew, Almonds, Chocolate & Coconut Rolls
These fructose-free bliss balls are a great treat to serve your friends and family to show them that quitting fructose can still be delicious!
1/2 cup cashew butter1/2 cup coconut oil2 tablespoon honey3 tablespoons raw cacao powder1 cup almond meal1 teaspoon vanilla1 teaspoon cinnamon1 teaspoon cardamom1 teaspoon nutmeg1 teaspoon ginger1/2 cup desiccated coconut (for rolling)
Place cashew butter, coconut oil, honey and cacao in a food processor. Process very quickly until just mixed- if you mix to much it will become too sticky.
Transfer to a bowl and add almond meal and spices. Stir until well incorporated.
Form 1 Tablespoon size balls - roll in the coconut and coat well. Continue forming balls with remaining mixture and coconut. Refrigerate for at least 30 minutes.
