Kitchari

We have a new spice mix at the local West Farmer’s Market. It is a Kitchari (pronounced kich-ah-ree) Spice mix, which is an Indian Curry. Kitchari is a traditional Ayurvedic healing meal.  It is prepared with a cooked mixture of the spice mix, ghee (clarified butter),  yellow mung dal and basmati rice. You will find having this staple around as a side dish to be a pleasant surprise on just about everything! In the winter, I eat it for breakfast.This is our Kitchari spice blend:Yellow Mustard Seed, Turmeric, Cumin Seeds, Coriander Seeds, Ginger, Fenugreek, Asafetida and Sea Salt. Our spices are 100% Certified Organic.Kitchari has long been used to nourish the sick and it is known to facilitate spiritual growth. It is the Ayurvedic cleansing and detoxifying food in Ayurveda, but it can also be found on many dinner tables throughout India. Ayurveda is powerful healing method, and translates to the science of life Ayur = life, Veda = science or knowledge. Ayurveda offers spiritual guidance in health, exercise and attitude. If you are looking for something to spice up your summer vegetables, or just want some solid nourishment, make up a batch of Kitchari. Vegetables such as zucchini, asparagus, and sweet potato would be wonderful with a drizzle of the spice mix. Simply heat 3 tablespoons of butter or olive oil and sprinkle 2 teaspoons of the spice mix into the butter or oil and allow to simmer for 2-3 minutes. Pour over your favorite vegetables and enjoy this Ayurvedic delight. Basmati rice and mung dal together create an easy to digest, balanced meal that is a delicious protein combination.Kitchari Basmati Mung Dal RecipeMix 3 teaspoons of the Kitchari spice mixture in 3 tablespoons ghee (or butter or olive oil) and cook for 2 - 3 minutes. Add 1 cup lentils and 1 cup basmati rice and 7 cups water. Cook 30-35 minutes. Add your favorite cooked vegetables and serve!Add Kitchari to Any Spiced Vegetables & RoastMix 3 teaspoons of the Kitchari spice mixture in 3 tablespoons ghee (or butter or olive oil) and cook for 2 - 3 minutes. Pour over your cooked vegetables- or toss this mixture with your favorite vegetables, and roast in the oven. Heat the spice mix with oil, cooking for 2- 3 minutes before using on vegetables or meats will bring out the great spice aromas.
