Rabbit with Onions and Raisins

onions and raisins in pot3 rabbits whole3 red onions sliced thin2 cups golden raisins1/2 bunch cilantro and parsley each chopped fine2 cloves garlic1 teaspoon each ginger, black pepper, salt, cinnamon, turmeric, Ras el Hanout2 tablespoons sugar1/2 cup oil

Mix the wet rub well and massage into rabbit. Allow to marinate for 30 mins.

In a large pot with 4 cups water, add rabbit. They should be slightly submerged in liquid (see photo)rabbit in pot

Place a cover on the pot and cook on high heat to bring to boil, then place in oven at 300 degrees and cook slowly for 3 hours.

Mix the sliced red onions in a bowl with 2 tablespoons sugar and 2 tablespoons cinnamon and massage with the hands until the onions are a bit soft about 4 minutes.

Sauté onions in olive oil until lightly caramelized.  Add raisins and teaspoon of Ras el Hanout and a teaspoon of cinnamon.  Cook lightly for 10 minutes.Just before serving, top onion and raisin mixture on finished rabbit.
