Simple Bean Recipe with Tahini Sauce

Tahini Sauce 

Tahini is an easy pantry staple. This sauce is great on cooked beans, roasted cauliflower, roasted potatoes and carrots. It is also great for raw vegetables.

¼ cup fresh lemon juice

2 small garlic clove, grated or pressed

½ cup tahini

6 tablespoons water, plus more as needed

½ teaspoon sea salt

Optional add ins: extra virgin olive oil, parsley, dill, chopped olives, moroccan pepper sauce 


Instructions

First, marinate the garlic in lemon juice for 10 minutes. The acidity of the lemon juice softens the harshness of the raw garlic.  Add the tahini, water, salt and mix to the consistency desired. If it’s too sharp, add ½ to 1 teaspoon extra-virgin olive oil to mellow the flavor. If it's too thick, add water, as needed, to reach your desired consistency. Add your choice of add-ins. For beans and cauliflower, chopped olives or a Moroccan pepper sauce works wonderfully.
