Soups For Heart Health
Onion Garlic Soup Serves 4-6
4 tablespoons olive oil
3 cups yellow onion chopped
4 large leeks - white and green parts, sliced
thin
½ cup of shallots minced
8 cloves garlic grated on minced
2 cups diced white or sweet potatoes
7 cups chicken stock or vegetable broth or
more if needed- for desired thickness
1 teaspoon of dried thym or 1 tablespoon of
fresh
oregano
2 bay leaves
1 teaspoon of dried or tablespoons of fresh
Heat the oil in a large pot over medium heat.
Add the onion, leeks, shallot, and garlic, and cook covered for about 25 minutes. Cook this very low and
slow otherwise, it will burn.
Add the stock and herbs, and the potatoes. Bring to a boil, cover, and turn way down and simmer for 20
minutes.
Remove the bay leaf and puree the soup.
If the soup needs more stock, add.
Ladle into bowls and serve with CRUNCHY Bread!

Your heart does not need the bread. It is a filler. Grains cause inflammation. The goal for a healthy
heart is to keep the inflammation down! Now, you could add sliced green onions. How about a cup of
cooked spinach or chard, or a can of diced tomatoes to increase your potassium? I will leave that up to
you, and yes, you could grate some cheese (aged Parm!) over this, and that would be heartwarming!Quick Green Soup
In a large pot, place 1 cup of water, half a head of broccoli, and 2 cloves of garlic minced or shallots.
Cover the pot and turn the stove on high to steam the broccoli and garlic or shallots. As soon as they
are cooked, add two handfuls of fresh spinach ( this is optional, but I know you have it in your
fridge, so you might as well get more potassium and use it up!)
Now, cover the pot and steam for, say, 30 seconds until it is wilted.
Now, what you wish to use for protein, I will let you explore, but here are two options:
1 can of garbanzo beans or ½ block of tofu.
Here is a nice place to add the miso if you have it. 1 teaspoon,
Put the beans or the tofu in the bottom of the blender. Hadd the steamed water and the vegetables
from the pot into the blender.
Buzz that blender
Now, You have soup. Although I am sure, it needs salt.
Serve with pumpkin seeds (Omega 6)
Or Fermented Cabbage or carrots?
