Sweet Potato Skins, Greens & Garlic

6 small sweet potatoes2 pounds of greens*10 garlic cloves roughly choppedextra virgin olive oil*use any you want - I love arugula and mustard- but they are spicyPreheat the oven to 350 degrees.Rub each sweet potato with a little olive oil and put in a baking dish. Bake for 1 hour, or until the potatoes are tender. Set aside until cool enough to handle.Cut the potatoes in half, lengthwise. Scoop out the middle into a bowl, leave a bit of potato around the edges so the potato skin keeps its shape.  Reserve skin halves in tact.  Mash the potatoes with a fork. Add salt and pepper.Heat a bit of olive oil in a pan and sauté the garlic, then add the greens and toss greens around until just wilted. Season with pepper.Fold the potatoes into the greens and garlic. Spoon back into the potato skins.

For an added kick - put a few tablespoons of chipotle  into the mash.

Place the potato skins on a couple of baking trays and bake in the oven for 10 minutes until warm.Image Credit:  NatalieMaynor
