Dukkah

1 cup lightly toasted pistachios1 cup lightly toasted almonds3 tablespoons coriander freshly ground3 tablespoons cumin seed freshly ground3 tablespoons caraway seeds freshly ground½ cup sesame seeds lightly toasted2 tablespoons sea salt1 tablespoon nigella seeds1 tablespoon dried mint1 tablespoon dried lemon zest1 tablespoon Urfa chilies crushed by hand½ tablespoon dried marjoramWe only use organic, non-irradiated spices and herbs.

We dry our herbs and lemon peel in our dehydrator and crush in a mortar and pestle and I believe it makes for the best flavors. I have a friend who cannot have almonds or sesame seeds and recently made her a batch without and it was delicious. So use what you love and want and you will have a flavor that works with every course!
