Lamb Dukkah

1 boned leg of lamb cut into cubes6 Tablespoons Dukkah spice mix3 cloves garlic crushedjuice of 3 lemons & zest of one lemon4 Tablespoons extra virgin olive oilPlace the lamb in a bowl together with 3 Tblsp of the Dukkah spice mix, garlic and the lemon juice. Toss together until well mixed, then cover and marinate in the refrigerator for at least 1 hour.Preheat cast iron skillet until very hot.Rub the marinated lamb with the olive oil then thread the lamb onto skewers and cook the lamb skewers on the griddle pan for 4 minutes on each side or until medium rare.Sprinkle the remaining Dukkah spices on the meat and serve at once.  Serve Dukkah Lamb over Jeweled Rice.
