End of the Season Salsa

end of season salsa-newsltr3 pounds tomatillos and green tomatoes1 cup chopped white onion1/2 cup cilantro leaves3 Tablespoons fresh lime juice3 Tablespoons orange juice2 hot peppers (start with a small amount and add as your taste allows)Salt to taste

I include a few garlic cloves when roasting.

Preheat oven to 400 degrees.

Cut green tomatoes into approximately the same size as tomatillos.  Pour ¼ cup olive oil in the bottom of a skillet.  Place the tomatillos and cut tomatoes into the skillet in one layer.  Roast for 20 minutes.  Remove from oven and allow to cool.

tomatotillos and tomatoes-newsltrPut tomatillos and tomatoes, orange & lime juice, onions, cilantro, and peppers (careful some peppers are very hot), into a blender or food processor and pulse/blend until all ingredients are finely chopped.  Add salt to taste.  Cool in refrigerator.

Serve with pork, chips, tacos, etc.
