Sexy Winter Carrots are the Lazy Man’s Root Cellar (and they are topless)

I found this photo of topless carrots selling for  75 cents more than Caitlin's. Perhaps"topless"  is the way to sell.

"I hate when it frosts in the Spring!" said my son Oren.

His dad answered, "It's not Spring yet!"

No, but we want it to be, I thought. But, wait! What could this frost possibly be good for?  There must be something. Perhaps it's those carrots and spinach I have been eating?

This time of year you could wake to a sunny beach day as this past weekend when we actually walked on Lucy Vincent Beach barefoot, or we could wake to snow!

But, I am thinking about food. What is to eat? "Carrots" said the sign down the street at Mermaid farm. I'll take anything!  As I take 5 pounds, I am cautioned by the farmer, Caitlin, not to eat too many as they can bring on a stomachache.

"Raw or cooked?"  I asked.  "...just don't eat too many" she says.

Okay, I want to know about these carrots.

Things like:  When were they dug?

When I ask Caitlin about it she says "It's all Elliot Coleman's idea. I've had him around for years, never read his stuff, and now I figure, why should I try new things, he has done so much of the work?"

She is referring to Elliot Coleman's Winter Harvest Handbook.

"Thanks to Elliot Coleman" she says!  Hmmmm...? I wonder, when I consider all the elements.

I bite into the SWEET crunch of life!  WOW - that is sweet and crisp. It reminds me of the spinach she had last week. It's almost like stevia! (a local sweetener) We both agree, it must be the cold that makes them so damn sweet.

It is crisp, sweet, sexy and cold carrots right out of the dirt!

"This winter carrot harvest method is the lazy person's root cellar and it has worked well for me", says Caitlin.

"Me too!" I add.
