Summer Squash and Arugula Salad

2 small summer squash (one of each color is fun) sliced paper thin4 radishes sliced paper thin4 tablespoons extra-virgin olive oil2 tablespoons fresh lemon juice1 minced garlic clove2 teaspoons sea salt and freshly ground black pepperBaby arugula1/2 cup chopped almondsa few shavings or parmesan or any hard cheesea few sprigs of thyme leavesWhisk together extra-virgin olive oil, lemon juice, minced garlic clove, and kosher salt and pepper. Pour dressing over squash and radishes and allow to marinate for 10 minutes. Toss the summer squash with the arugula and garnish with the chopped almonds, parmesan and thyme leaves.Image Credit:  TimSackton
